Tahini Sauce Recipe
The Tahini Sauce is a sauce based on sesame seeds, very particular but delicious and nutritious, typical of Middle Eastern cuisine but, in recent years, is spreading also in Western cuisine. The texture can vary according to your tastes, there are those who prefer it very dense (a bit like peanut butter to understand) and there are those who prefer it slightly more fluid so that it is easier to amalgamate for the preparation of various dishes such as The hummus ( see recipe).
You can also buy already ready, in bio or ethnic stores (attention instead to those present in supermarkets, read well the ingredients, sometimes may be present additives and hydrogenated fats).
In Middle Eastern cuisine is used in different ways: natural with simple bread or pita (characteristic bread, flat and soft); with raw or boiled vegetables; as a sauce accompaniment to meatballs of both meat and vegetable based legumes (e.g. Falafel, ( see recipe); To flavor meat or grilled fish and so on.
In the world of "biological" in the West has spread thanks to its nutritional properties, enclosed in the sesame seeds. The latter are oily seeds rich in proteins, calcium, folic acid; Excellent for the prevention and treatment of cardiovascular problems thanks to their contents of polyunsaturated fatty acids (Omega 3 and Omega 9), the so-called "good fat"!.
Ingredients(for about 150/200ml product)
- 200g sesame seeds
- 3 tablespoons extra virgin olive oil
- Lemon juice (just a few drops)
Preparation Tahini Sauce
First you have to toast the sesame seeds in a pan anti-adherent to medium-low heat but without exaggeration: they must have a delicate taste, tostandoli too much you risk a bitter aftertaste. At this point the ideal would be to crush them with a mortar but, for those who do not have time or patience (like me) a good mixer goes more than good. As you blend, add as the oil (and, if necessary, hot water according to the consistency you want to get). In the end you get a uniform and light colored mixture.
